Vanley has chosen the famous ackee and saltfish as one of his favourite recipes to include with his beautiful placemats.
The ackee fruit was imported to the Caribbean from Ghana before 1725. It is also known as Blighia sapida. The scientific name honours Captain William Bligh, who took the fruit from Jamaica to the Royal Botanic Gardens in Kew in 1793 and introduced it to science.
Combining this strange fruit with salted cod, soaked overnight, and various other African Caribbean spices and seasonings, produces an authentic dish suitable for breakfast, lunch or dinner.
